Vegetable Side Dish (Traditional)- Narthangai Theeyal (wild Lemon/Citron/Bitter Orange Instant Pickle)
Narthangai Theeyal: (Bitter orange or Citron Instant Pickle)
Theeyal is one of the common dishes in kerala & Kanyakumari District. In most of the traditional functions (in kanyakumari district) this short life instant pickle(narthangai theeyal) is served with Thali for Lunch. This is best Served with Thayer Saddam or rice.
Ingredients :
- Narthangai (unripped bitterorange) - 1
- Tamarind - small lime size or concentrated paste 1 table spoon
- Small onions chopped - 15
- Green chilli chopped - 3
- Curry leaves - few
- Mustard seeds -1 teaspoon
- Fenugreek -1/2 teaspoon
- Asaefotida (hing) - a pinch
- Turmeric powder - 1/4 teaspoon
- Chilli powder - 2 teaspoon
- Corriander Powder - 1teaspoon
- Pepper powder - 1/4 teaspoon
- Cumin Powder - 1/2 teaspoon
- Fenugreek powder - 1/4 teaspoon
- Rock salt as needed
- Sesame oil - 1tablespoon
- Jaggery - a pinch
Method :
- Heat the oil in the pan,splitter the mustard seeds,add the hing,curry leaves & fenugreek seeds. Sauté it.
- Add the green chillies & small onions. Fry it until it becomes translucent.
- Add the cut narthangai (small pieces) in to the pan. Let it half cook for about 4-5minutes.
- Add turmeric powder,chilli powder,coriander powder, pepper powder & cumin Powder. Combine and cook for about one minute.
- (Soak the tamarind with little water & Take the Extract.)Add the Tamarind extract,fenugreek powder, jaggery & salt. Let it boil for few minutes.
- Cook it with a low flame for about 5-10minutes(until the oil comes out).Switch off the fire.
