Pumpkin Soup


This soup is one of our family favourite. we eat with garlic bread/toasted bread.Sometimes i make soup buns, pour the soup inside & have it.

Ingredient:

  1. Pumpkin chopped finely - 300gm
  2. Onion chopped finely -1
  3. Garlic chopped - 2
  4.  Mixed spices -1/2 teaspoon
  5. Pepper freshly grounded -1/2 teaspoon
  6. milk -2cups/400ml
  7. water -1cup/200ml
  8. Flour -1/2 table spoon
  9. rocksalt -1teaspoon/as needed
  10. curry powder -1/2 teaspoon(optional)
  11. Pamersan Cheese grated - 1 teaspoon
  12. Butter -1tablespoon

Method:

  1. Heat the pan,add butter,onion & garlic fry till it becomes translucent.Add mixed spices & flour.fry it in slow fire without burning.


  2. Add boiled milk slowly by whisking & let it boil for while (2mints).
  3. Then add Chopped Pumpkins & Hot water.
  4. Let it cook for about 30-40 minutes in medium or low fire.Stir it & mash it occasionally.If needed can add little more water.
  5. Switch off the stove add pepper & salt as needed.
  6. Decorate with Parmesan cheese before serving.
